Zucchini has been my life saver when I tried a no-to-low carb diet for a month. I never realized how much I loved carbs until I gave it up. I ate some type of carb for EVERY meal. Breakfast may be a bagel, lunch could be something ‘light’ like cereal and for dinner, I may have fettucini alfredo. Not to mention crackers for a snack. I had it bad.
I made a few meals with zucchini and here is one of them. It’s very simple and you can eat it for any meal of the day!
What you need:
*Zucchini (I had two)
*1 Albacore Solid White Tuna (canned, in water)
*Miracle whip or mayo (optional)
Step 1: Trim the ends off of zucchini, cut zucchini in half lengthwise, scoop out pulp. (I used a spoon)
Step 2: Rub olive oil all over zucchini, place on baking sheet that’s lined with aluminium foil and set your conventional oven to 350 degrees. Bake uncovered for 10-15 minutes.
Step 3: Put tuna in a bowl, mix with 1-2 tablespoons of miracle whip. Add salt and pepper for taste.
Step 4: After the zucchini baked for 10-15 minutes, take it out of the oven, add tuna in the ‘boat’.
(If you’re a cheese lover, add whatever cheese you like. I used Sargento Tomato & Basil Jack Cheese)
Step 5: Put zucchini boats back in the oven until tuna browns a little on the top (and when cheese has melted).
Two zucchini boats had cheese and the other two did not. Both were equally delicious.
This is another fun way to eat tuna and the kids enjoyed it as well!
